My Upwork profile is new, but I've worked with +100 businesses and generated more than $30M in directly attributed revenue over the last 3 years, so I'm far from new in the game. Most people selling AEO focus on your site, schema, entity cleanup, answer-formatted content, llms.txt. That's worth doing and I do it, but it's maybe 20% of what moves the number. The other 80% is getting you named on the third-party pages the models already pull from, the roundups, best-of lists, comparison pages and directories. That's an outreach and list-building problem more than a content one, which is why most SEO people skip it. My background is outbound and data at scale, so it's the part I'm best at.
